Spicy Cilantro Lime Sauce
This zippy little sauce is the perfect condiment to have on hand during the summer. It’s a little spicy but the infusion of lime juice imparts a clean, refreshing flavor that holds its own against the abundance of cilantro that makes up the majority of the sauce’s mass. We made it to accompany our new veggie burger recipe (which is red lentil based with curry and cumin) but we’ve also been drizzling it on burritos, tacos and grilled fish as well as south-western salads with corn and peppers. Thankfully, it’s a snap to make and doesn’t require turning on an oven or spending more than a few minutes in the kitchen, making it ideal to prepare during this hot hot heat!
Spicy Cilantro Lime Sauce
Makes 1 Cup
Ingredients
3 garlic cloves
½ to 1 jalepeno (depending on how spicy you want your sauce), seeded and chopped into a few pieces
juice of 1 lime
1 cup tightly packed cilantro (leaves and stems)
½ cup sour cream
Preparation
Pulse your garlic, jalepeno and lime juice in a blender or food processor until still chunky but well combined, then add your cilantro and sour cream. Pulse until chunky-smooth. You’re done!
